MEZCAL
GLOSSARY
AGAVE
Scientific name given to the maguey plant back in the XVIII century, borrowed from Ancient Greek Ἀγαυή (Agauḗ, “Agave”), from ἀγαυός (agauós, “noble, illustrious”).
MAGUEY
Agave. From náhuatl “metl” or “mexcalmetl”.
HIJUELO
Agave/Maguey seedlings.
TAPADO
Tapado translates to the (act of) covering, it refers to the agave cooking process, also known as horneada (baking).
BAGASSE
The agave fibers byproduct of the mezcal production process.
TAHONA
Circular mill made of stone or cement, pulled by animals or machines, used to crush cooked agave hearts.
STILL
Device used to distill mezcal and other spirits by heating up fermented juices to a boiling point. Since alcohol boils at a lower temperature than water, the result is a liquid with high alcohol concentration.
